Homemade Instant-Pot Soy Yogurt

I grew weary of purchasing yogurt that contained ingredients I couldn't pronounce and didn't want to consume anymore mass produced products. Honestly, creating anything from scratch benefits your health, the environment, and reduces your overall carbon footprint. This recipe is so simple, you won't ever want to purchase store bought again.
Ingredients:
1 quart pure soy milk (look at the ingredients list - look for nothing added but organic soybeans and water). Trader Joes has a good organic soy milk at an excellent price.
2 Tablespoons maple syrup
1 Tablespoon vanilla powder
1/4 cup of leftover yogurt or 3 probiotic pills
Directions:
Mix all of the four ingredients well and pour into a clean instant pot. There are a lot of other methods out there and I have tried them all. I prefer the pour in technique to be the tastiest. Set your instant pot to yogurt mode for 12 hours and patiently wait. I start mine at night so when I wake up I have delicious homemade yogurt. Spoon out into your desired containers and enjoy.
Helpful Hint - You can also pour your yogurt mixture into 3 pint jars and place into Instant- Pot.
To take this to another level and make greek yogurt, which I do because I love the thickness. For this, spoon the instant pot yogurt into a fine mesh strainer placed over a bowl and cover for a few hours or overnight in the refrigerator. Then store in a glass jar and enjoy. You now have homemade greek yogurt! Note - We use stainless steel coffee strainers from Amazon.
