Quick Pear Dessert

This year, fall weather has arrived swiftly in the Pacific Northwest, bringing chilly 30-degree nights with brisk daytime temperatures in the 50s and 60s. The fall colors are stunning creating an atmosphere that encourages preparing cozy and delicious fall desserts.
This pear dessert recipe is quick, healthy, and one you will want to make again and again. Server warm or cold, topped with whipped cream, add to ice cream, or our favorite, Greek yogurt.
Ingredients:
6 medium size ripe pears (preferably organic)
1 cup of water
1 1/2 cups of frozen blueberries
1/4 cup of candied ginger.
Directions:
Slice each pear in half and carefully remove the core (do not peel the pear).
Place the prepared pears cut side down in a large saute pan.
Pour the water, blueberries and candied ginger over the pears.
Bring to a boil, cover and simmer for 10 minutes.
Turn pears over, drizzling a little sauce on each and cover, simmer for another 10 minutes.
You now have a delicious, healthy dessert . Quick and Easy and worthy of a fall dinner party!
