Jeff's Scones

Since retirement my husband has become quite the gourmet cook. He discovered this scone recipe in the Vegan Wholesome cookbook by Brandi Doming, author of the The Vegan 8. Jeff put his own spin on it and tweaked the recipe to his liking. One of my daughters, who is gluten free, absolutely loves these in the chocolate chip version. Don't let the gluten free or vegan scare you as the scones are absolutely amazing and extremely addicting, thank goodness they are healthy.
Scone Ingredients:
2 cups almond flour
1/2 cup oat flour (use gluten free flour as an alternative)
1/2 cup tapioca starch
1 Tablespoon ground flaxseed
2 teaspoon baking soda
1 teaspoon cardamon
1 generous teaspoon of cinnamon
1/4 cup coconut sugar
1/4 cup maple syrup or agave syrup
1 generous Tablespoon marmalade (we use Bono sicilian orange)
grated zest of one orange
1/4 cup freshly squeezed orange juice
1 teaspoon vanilla extract
Optional -
1/2 cup chocolate chips, craisins, raisins or currants
Directions:
In a large bowl, whisk together the almond flour, oat flour, tapioca starch, flax seeds, baking powder, coconut sugar, cardamon, cinnamon, orange zest and chocolate chips. and salt. Add the maple syrup, orange zest, orange juice, orange marmalade, vanilla and stir until a thick dough forms
Jeff presses the dough into a bowl lined with parchment paper. Place into the freezer for 1 hour. The dough will be sticky to handle if you skip this step.
Preheat the oven to 375 degrees about 10 minutes before removing your dough from the freezer. Line a sheet pan with parchment paper, place your chilled dough in the center of the sheet pan and flatten with your fingers, until fattened about 8 inches round and 1 inch thick.
With a sharp knife, cut the round into 8 equal wedges. Arrange the wedges on your sheet pan, spaced apart a few inches.
Bake at 375 degrees for approx 18 to 20 minutes or until golden brown.

The original recipe, by Brandi Doming, calls for a orange glaze, we don't typically use the recipe for the glaze but I have included it for you. Our last chocolate chip batch, we made a vanilla glaze and lightly drizzled, which was a special touch.
Orange Glaze:
1/4 cup powdered sugar, 2 teaspoons orange juice, whisk together and drizzle on the cooled scones. Vanilla option - simply replace the orange juice with vanilla.
